Pat Ferguson's Irish Pea & Ham Soup
  Winter Series 2007
Ingredients

¾ lb red lentils or split peas
1 Irish smoked ham shank
4 carrots
2 parsnips
2 onions
3 sticks celery
4 pints water

Method
Throw everything into a pot
Bring to the boil & simmer for 1 hour
Remove the bones
Liquidise, season to taste & enjoy!
 
 

 

Pat Ferguson's Mushroom  Soup  Winter Series 2006
Serves 4, so for 20 sailors multiply... yep, you've got it!

Ingredients
1 ½ lbs. mushrooms coursely chopped
¾ lb. onions
3 pints chicken stock
1 tablespoonful vegetable oil
Seasoning

Method –
Sauté onions in vegetable oil for 10 minutes. 
Add chopped mushrooms & sauté for 10 min. 
Add stock 
Simmer for 10 min 
Liquidise. 
Season to taste.
