Courgette
and Blue Cheese Soup
This will make
approx 8 servings
Ingredients
4 Garlic
cloves
3 Onions
8 Large
courgettes
3 Potatoes
peeled and roughly chopped
Butter
Chicken or
Vegetable stock
Method
Roughly chop
garlic, onions & courgettes
Sauté
in the butter till sweated but not coloured.
Cover with
chicken or vegetable stock
then add roughly
chopped potatoes and lots of pepper.
Once vegetables
are all cooked, liquidise till very smooth...
add a generous
piece of any blue cheese you may have lurking about the fridge.
I normally
use a piece of stilton, amount is determined by how much you like blue
cheese.....
cool and add
some cream/milk.
Mike
always produces an unusual soup. The cheese should be one that is supposed
to be blue rather than one that is blue because it has been in the Sailing
Club fridge for so long. During the Winter Series, the OOD makes the soup
and here is Mike doing his stint as OOD in November. The blue bit behind
him is the sky............remarkably.
Note
that the arms are not blue.
